Rice noodles

Rice noodles are particularly popular in the southern regions of the country such as Yunnan and Guangxi provinces. Rice noodles are versatile and can be served in soups, stir-fries, or cold salads, with various sauces and toppings. They are made from rice flour and come in different shapes and sizes, from thin vermicelli to wide flat noodles. Rice noodles have a long history in China and are associated with agricultural traditions in rice-growing regions. They are also enjoyed in a variety of dishes throughout China and are often associated with festivals and celebrations, such as the Dragon Boat Festival, where they are used in traditional dishes like zongzi.

Rice noodles originated in Xuzhou, Jiangsu Province. It is said that the production process of rice noodles originated from a local chef who accidentally overcooked the noodles and had to dry them before cooking them again while cooking noodles for a guest. After some attempts, the chef unexpectedly found that the noodles had a better texture after drying, thus inventing the delicacy of rice noodles.
