Deep-fried lobster noodles (yee mein)

This dish is a specialty of Cantonese cuisine, particularly popular in Hong Kong. The noodles are crispy on the outside and soft on the inside, served with a rich lobster sauce.

Deep-fried lobster noodles are usually enjoyed during festive occasions or as a luxurious treat and often served at banquets and celebrations in Hong Kong.

Over 300 years ago, during a banquet hosted by a family named Yee, a chef mistakenly fried cooked egg noodles in hot oil instead of boiling them. The resulting crispy noodles, soaked in soup, unexpectedly pleased the guests. This mishap led to the creation of a popular dish known as "Yee noodles",which people nowadays serve it with lobsters, calling it “deep-fried lobster noodles”
